TASTY SOUPS FOR ALL SEASONS

Soup is a food that is made by combining ingredients such as meat and vegetables in stock or hot/boiling water, until the flavor is extracted, forming a broth.

Traditionally, soups are classified into two broad groups: clear soups and thick soups. The established French classifications of clear soups are bouillon and consommé. Thick soups are classified depending upon the type of thickening agent used: purées are vegetable soups thickened with starch; bisques are made from puréed shellfish thickened with cream; cream soups are thickened with béchamel sauce; and veloutés are thickened with eggs, butter and cream. Other ingredients commonly used to thicken soups and broths include rice, flour, and grain.

Whether it be hot or cold, thick or thin, everyone can agree on one thing; soups are delicious and warm the soul.  Here is a list of tasty soup recipes that are sure to put a smile on anyone's face.


Cold Weather Soups

Carrot Coconut Soup with Sweetie Pie™

Ingredients:

    * 1 large onion, chopped
    * 2 TBS fresh ginger, sliced
    * 4 medium cloves garlic, chopped
    * 1 tsp curry powder
    * 1 TBS + 3 cups chicken or vegetable broth
    * 2 cups sliced carrots, about ¼ inch thick
    * 1 container of Tastybaby's Sweetie Pie
, defrosted
    * 5 oz canned coconut milk
    * salt and white pepper to taste


Our Tasty recipe

   1. Chop onion and let it sit for at least five minutes to bring out its hidden health benefits.
   2. Heat 1 TBS broth in a medium soup pot. Healthy Sauté onion in broth over medium heat for about 5 minutes, stirring often.
   3. Add garlic, ginger and continue to sauté for another minute.
   4. Add curry powder and mix well with onions.
   5. Add broth, carrots, and Sweetie Pie organic baby food and simmer on medium high heat until vegetables are tender, about 15 minutes.
   6. Add coconut milk.
   7. Blend in batches making sure blender is not more than half full. When it's hot, and the blender is too full, it can erupt and burn you. Add salt and pepper to taste.
   8. Return to soup pot and reheat.COLD WEATHER SOUPS

Corn Chowder

Tasty Ingredients:

2 boxes (6 containers) Tastybaby Corn in the USA®, defrosted
1 Tbs organic butter
2 Tbs extra-virgin olive oil
1 organic onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
5 cups organic vegetable stock
2 cups organic heavy cream
2 organic Idaho potatoes, peeled & diced
1 cup organic frozen corn kernels
Salt & freshly ground black pepper, to taste
1/4 cup chopped fresh parsley leaves, coarsely chopped

Tasty Recipe:
 
Heat butter & olive oil in a soup pot & add onion, garlic & thyme.  Cook 8-10 minutes.  Dust mixture with flour, stirring to coat everything.  Add vegetable stock & bring to a boil.  Add cream & potatoes.  Boil about 8-10 minutes, until potatoes start to break down.  Stir in defrosted Corn in the USA® & corn kernels.  Season with salt & pepper. Simmer about 10 minutes, letting all the flavors combine.  Stir in parsley right before serving.  Garnish with a dollop of organic sour cream or a sprinkling of cheddar cheese.

Mama Mia Minestrone

Tasty Ingredients:

1 box (3 containers) Tastybaby Mama Mia®, heated thoroughly & then cooled ¼ cup of olive oil
1 medium sized organic white onion, diced
3 medium organic carrots, chopped
2 organic celery stocks, chopped
5 cloves organic garlic
1 organic zucchini, chopped
1 can whole, peeled organic tomatoes
9 cups organic vegetable stock
1 can organic cannellini beans
2 Tbs organic parsley, finely chopped
½ cup grated Parmesan cheese
Salt & pepper, to taste

Tasty Recipe:

In a large soup pot, heat the oil & sauté onion, carrots, celery & garlic.  Cook about 15 minutes, until soft.  Add zucchini & cook for 3 minutes.  Stir in tomatoes, defrosted Mama Mia® & vegetable broth.  Bring to a simmer & cook about 10 minutes.  Add beans & cook for 5 minutes.  Remove soup from heat & stir in herbs & cheese.  Season with salt & pepper to taste. Serve with a sprinkle of Parmesan

Minty Pea Soup

Tasty ingredients:

2 boxes (6 containers) Tastybaby Peas On Earth®, heated thoroughly & then cooled
1 small or ½ large organic yellow onion, chopped fine Small bunch fresh mint
12 oz. low sodium organic chicken stock (use water or vegetable stock, if preferred)
1 Tbs organic butter
1 Tbs olive oil
Salt & pepper, to taste

Our Tasty Recipe:

Sauté onions in butter & olive oil until transparent (do not brown). Add Peas On Earth®, mint & stock.  Simmer on low heat until purée has melted & mint has steeped. Remove & discard mint. If desired, blend with an immersion or traditional blender. Season to taste. Garnish with a dollop of crème fraiche, organic sour cream, croutons, or a fresh mint sprig.

Hearty Lentil Stew

Tasty ingredients:

1 box (3 containers) of Tastybaby Bollywood Baby®, heated thoroughly & then cooled
3 Tbs olive oil
2 garlic cloves
1 ½ quart organic vegetable stock
2 cups brown lentils
¼ cup organic tomatoes, chopped
1 pound red skinned potatoes, diced
12 oz. organic spinach
½ cup chopped mint
½ cup chopped parsley
Salt & pepper, to taste

Tasty Recipe:

In a large soup pot, heat oil & cook garlic 30 seconds.  Add Tastybaby Bollywood Baby®, vegetable stock, lentils & tomatoes.  Bring to a boil, reduce the heat to a simmer & cook for 10 minutes with the cover on.  Remove cover & add potatoes, cooking until tender.  Remove from heat & stir in spinach, mint & parsley.  Season with salt & pepper.

Chicken & Rice Soup

Tasty Ingredients:

2 boxes (6 containers) Tastybaby Kickin' Chicken®, heated thoroughly & then cooled
1 organic white onion, chopped
2 Tbs olive oil
2 stalks organic celery, diced
1large organic carrot, finely chopped
½ cup uncooked long-grain rice
1 small can organic diced tomatoes
2 cups organic chicken stock
¼ cup organic basil
Salt & pepper, to taste

Tasty Recipe:
 
Heat oil in a large soup pot & cook onion, celery & carrot until softened.  Add rice & cook for 2 minutes making sure it is evenly coated with oil.  Add tomatoes & chicken stock and bring to a boil.  Season with salt & pepper.  Reduce heat, cover and simmer for 15 minutes.  When the flavors have come together take off heat & stir in basil. Serve with our Corn in the USA® muffins or a piece of whole grain bread.


Squash ‘Em Soup

Tasty ingredients:

2 boxes (6 containers) of Tastybaby Squash ‘Em®, heated thoroughly & then cooled
1 Tbs unsalted organic butter
2 Tbs organic extra-virgin olive oil
1 small organic yellow onion, chopped
3 organic garlic cloves, smashed
3 sage sprigs, tied with string (reserve leaves for garnish)
3 cups low-sodium organic chicken broth
1-2 cups purified water, as needed
Salt & pepper, to taste
1/2 cup organic Parmesan cheese

Our Tasty Recipe:

In a large soup pot, sauté onion in butter until soft, about 5 minutes.  Add garlic & sauté about 30 more seconds. Add Squash ‘Em® & simmer mixture for 30 minutes, stirring occasionally. Transfer mixture to a blender, add Parmesan cheese & purée until smooth.  Add enough water to achieve your desired consistency and salt & pepper to taste.   Return soup to saucepan & warm over moderate heat. Garnish with Parmesan cheese or truffle oil

Organic Pumpkin & Squash Em'™ Curry with Santa Barbara Prawns

9-3.5 ounce packs(3 boxes) Squash ‘Em Tastybaby Frozen Organic Baby Food, thawed
3-14 ounce cans Organic Light Coconut Milk
1 ½ to 2 Tbsp Palm Sugar
3 tsp Fish Sauce or as needed to desired saltiness
1 ½ to 2lbs(about 20 pieces) peeled Wild Caught Prawns or Shrimp
2 cups Organic Baby Zucchini, cut on the bias in ½ inch pieces
2 large bunches Organic Thai Basil or Fresh Basil, reserves basil sprigs for garnish
2-4 Organic red hot chilies, cut into thin slivers with seeds(optional)
Kosher salt for seasoning
6 Organic Acorn Squash(about 1 lb each), hollowed out into “bowls”

Serve with steamed Jasmine Rice

Our Tasty Recipe:

Do not shake the cans of coconut milk before opening. Spoon 2/3 cup of the thickest cream off the top of a can into a large pot placed over medium-high heat. Reduce cream until thick and bubbly (about 3 minutes), then add the curry paste. Stir and mush the paste into the coconut cream and fry for a few minutes until it is very aromatic and darkened in color. Then pour in the remaining milk from both cans, stirring well to dissolve the paste to make a smooth rich sauce. Whisk in all of the defrosted Squash ‘Em to the curry base until combined well.

 Add 1 1/2 Tbs. of palm or coconut sugar, stirring well to blend into the curry sauce. Taste and add fish sauce only as necessary to salt to the desired saltiness. Add the pieces of zucchini & the basil bunches (tied with string).

Return to a boil, then lower heat to medium, or just enough to simmer the sauce gently. Cook partially covered, stirring occasionally, until the squash is tender (15-20 minutes or more). Taste the sauce and adjust as needed with fish sauce, palm sugar & kosher salt to the desired salty-sweet combination. Season the prawns/shrimp with kosher salt. Add the seasoned prawns to the curry and poach for 10-15 minutes, or until cooked through and firm.

Turn off heat and spoon curry into a hollowed out acorn squash or serving dish. Garnish top with basil sprig(s) & slivered chilis. Serve with steamed jasmine rice.


Warm Weather Soups

Life’s A Peach®, Chilled Soup

Tasty ingredients:

1 box (3 containers) Tastybaby Life's a Peach®
2 cups organic plain yogurt
1 cup organic peach nectar
2 tsp almond extract
Crème-fraiche, as garnish

Our Tasty Recipe:

In a large bowl, whisk together all ingredients & chill in the refrigerator for a couple of hours, to let the flavors meld. Garnish with fresh peach slices & a dollop of crème fraiche.


Chilled Minty Pea Soup

Tasty ingredients:

2 boxes (6 containers) Tastybaby Peas On Earth®, heated thoroughly & then cooled
1 small or ½ large organic yellow onion, chopped fine Small bunch fresh mint
12 oz. low sodium organic chicken stock (use water or vegetable stock, if preferred)
1 Tbs organic butter
1 Tbs olive oil
Salt & pepper, to taste

Our Tasty Recipe:

Refreshing Pear & Pumpkin Soup

Tasty ingredients:

2 boxes (6 containers) Tastybaby Squash ‘Em®, heated thoroughly & then cooled
1 box (3 containers) Tastybaby Hip 2B Pear®, thawed
1 Tbs unsalted organic butter
2 Tbs organic extra-virgin olive oil
1 small organic yellow onion, chopped
3 organic garlic cloves, smashed
3 cups low-sodium organic chicken broth (may use vegetable broth, if preferred)
1 Tbs apple cider vinegar
1-2 cups purified water, as needed
Salt & pepper, to tast

Our Tasty Recipe:

In a large soup pot, sauté onion in butter until soft, about 5 minutes.  Add garlic & sauté about 30 more seconds. Add Squash ‘Em® & Hip 2B Pear® & simmer mixture for 30 minutes, stirring occasionally. Transfer mixture to a blender, add apple cider vinegar & purée until smooth.  Add enough water to achieve your desired consistency & season with salt & pepper to taste.   Chill in the refrigerator & serve cold in bowls or shot glasses.
