WATERMELON POPSICLES
Watermelon Popsicles

SERVING SIZE
Makes about 8 1/4-cup popsicles.
Ingredients:
2 1/2 cups seeded diced watermelon
1/2 cup fresh raspberries or strawberries(may use frozen unsweetened, thawed)
4 tablespoons sugar
1 tablespoon plus 2 teaspoons fresh lemon juice
1 tablespoons honey or light corn syrup
Method:
Combine all ingredients in blender or food processor; puree until smooth. Strain puree into a large measuring cup, pressing on solids to extract as much liquid as possible. Pour puree into Popsicle molds, dividing equally. Freeze overnight. (Can be prepared weeks in advance. Keep frozen.)
Variations: Add fresh blueberries, sliced kiwi, sliced strawberries, or raspberries to the puree in the Popsicle molds before you freeze. It looks beautiful and tastes great!
