SLOW COOKIN': TASTY RECIPES FOR THE NEW YEAR

Organic Taco Soup

2 pounds organic ground beef, turkey or chicken

1 tablespoon of canola oil

1 ½  cups diced organic yellow onions

4 cloves of fresh organic garlic, chopped fine

2 cups of organic corn kernels(use 4 ears and remove the kernels)

2 (15 1/2-ounce) cans organic pinto beans

1 (15 1/2-ounce) can organic kidney beans

1 (14 1/2-ounce) can organic Mexican-style stewed tomatoes

2 (14 1/2-ounce) can organic diced tomatoes

1 (4 1/2-ounce) cans diced organic green chiles

1 (1 1/4-ounce) package organic taco seasoning mix

2 tablespoons of fresh organic cilantro, chopped fine

1 tablespoon of kosher salt

Organic White Corn chips, for serving

Organic Sour cream, for garnish

Organic Grated cheddar cheese, for garnish

Organic Chopped green onions, for garnish

Organic Pickled jalapenos(optional), for garnish

Our Tasty Recipe:

Saute the ground beef in a large skillet with the canola oil. Once beef has begun to brown, add the onions and the minced garlic. Continue cooking the mixture until onions become translucent; drain the excess fat, then transfer the cooked beef, onions and garlic to a large slow cooker or a stockpot.

Add the beans, corn, tomatoes, green chiles, taco seasoning, chopped cilantro and kosher salt and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.

Taste Taco Soup for seasoning and add salt if desired. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.


Tasty Sloppy Joes

INGREDIENTS

1 (5 pound) organic pork butt roast

kosher salt and pepper to taste

1/2 (14 ounce) can organic low-sodium beef broth

¾ of a bottle your favorite organic BBQ sauce

Organic Wheat Dinner Rolls or Organic Kaiser Rolls

Sliced Pickles(optional)

Our Tasty Recipe:

1. Cut roast in half. Rub each half with salt and pepper, and place in the slow cooker. Pour broth and BBQ sauce over the meat.

2. Turn the slow cooker to Low, and cover. Cook for 6 to 8 hours, or until the roast is fork tender.

3. Carefully remove the roast to a cutting board. Debone the roast and remove any excess fat. Pull the meat off the bone with a fork and shred it. You may also chop it with a cleaver afterwards, if you like it really finely cut.

4. Place the shredded pork in the slow-cooker with the rest of the BBQ sauce and continue to heat on low.

5. Warm rolls in the oven and spoon the pulled pork on to the buns with the sliced pickles and your in business!  Little ones love this dish as it is easy to eat and tastes great!!!

Slow Cooked Organic Chicken with Rosemary, Apples and Onions

2 cups sliced organic onions

½ cup organic celery diced in ½ inch pieces

2 organic granny smith apples, peeled, cored and sliced

2 pounds cut up organic chicken pieces (with bone), with or without skin

1 tablespoon of olive oil

1 teaspoon kosher salt

1/4 teaspoon ground black pepper

2 tablespoons chopped fresh organic rosemary leaves

1 teaspoon of chopped fresh organic thyme leaves

1 cup reduced-sodium organic chicken broth

1/2 cup organic light cream

2 cups cooked organic jasmine rice (white or brown)

Season the chicken with salt, pepper and 1 tablespoon of rosemary. In a large sauté pan over medium-high heat, sauté the chicken skin side down until slightly golden(about 4 minutes). Arrange onion, celery and apple slices in bottom of slow cooker, season with salt and pepper. Place sautéed chicken pieces on top of the apple mixture.  In a medium bowl, whisk together chicken broth and and light cream. Pour mixture over chicken.

Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, or until the temperature reaches 170 degrees.

Serve chicken, sauce, apples, and onions over rice and volia!
